This Breakfast is so easy and full of healthy fats and protein. It is so important to start your day with stable blood sugar so that your body is in a better state to burn fat for fuel. We can do this by keeping breakfast predominantly protein and fat only.
Ingredients
1/2 Avocado
a large handful of Spinach or rocket
1 - 2 smoked Mackerel fillets
2 eggs
half a lemon
extra virgin olive oil
Method
This one is dead easy. Just slice the avocado up and place it on a bed of spinach or rocket. squeeze over half a lemon and add a drizzle of extra virgin olive oil.
Cook the eggs to your liking. ( I prefer poached for this dish) and then slice up your mackerel and you are good to go.
