Butternut Squash Breakfast Sausage


Breakfast seems to be a struggle for some, with toast and cereal being consumed way too often. For an energy filled productive morning, breakfast should be full of protein and good fat, not fast digesting carbohydrates!

Here is a recipe you can prepare on the weekend, then just cut off a couple of slices each morning, it can be enjoyed cold or re-heated in the microwave, for a more warming breakfast. It also makes a great lunch or mid-morning snack.

And it's so simple to make so anyone can make it!

Ingredients

  • 1 tsp Coconut Oil

  • 500g Turkey Mince

  • 4 Bacon Rashers

  • 200g Butternut Squash Diced

  • 1 Small Apple Diced

  • 1 tsp Onion Powder

  • 1 tsp Garlic Powder

  • 1 tsp Thyme

  • Fresh Sea Salt and Pepper

Method

Preheat Oven to 200c

Melt the Coconut Oil and use to grease a 9x5” tin.

Cook the Bacon in the oven or under the grill until just crispy, Set aside to cool then chop into small pieces.

Mix all ingredients together, and spread the mixture evenly into the tin.

Cook in the oven for 20-25 minutes, until thoroughly cooked.

Enjoy straight away or cool and refrigerate, ready for tomorrows breakfast. It can be eaten cold or reheated, and it is best with some fresh berries on the side!
