This weeks recipe is a lovely teriyaki pork dish. It's super quick to make and super tasty, and not only that but it's super healthy too. And you won't get that many 'Supers' in any other recipe!
As well as being super quick, tasty and healthy, this Teriyaki Pork dish is also one of Mark's favourite 'meal prep' meals. It's a meal you won't get tired of eating each day.
If you are slimming down, enjoy it with some steamed green veg, but if you are wanting to gain muscle, add some rice.
Ingredients:
800g Boneless Pork Tenderloin (trim the fat, if you want)
80ml of soy sauce
80ml of water
2 cloves of garlic, crushed
½ tsp of ground ginger
½ tsp of onion powder
2 level tbs of Xylitol (or honey)
1 tsp of sesame oil
½ tbs of cornstarch
2 spring onions, chopped
sprinkle of sesame seeds
Method:
Add the pork tenderloin to the pressure cooker
In a bowl whisk together the soy sauce, water, garlic, ginger, onion powder, xylitol and sesame oil
Pour into the pressure cooker, covering the pork tenderloin
Rotate the pork tenderloin to cover in the sauce.
Set to manual for 20 mins (high pressure)
Close valve.
Once cooked, do a quick pressure release
Remove pork to a plate, leaving the sauce in pressure cooker
Set to saute mode.
Whisk the cornstarch with a little water. Add into the instant pot and stir until sauce thickens
Slice pork and add back into sauce.
Plate and sprinkle with chopped spring onions and a few sesame seeds.
The amount of meat that you use is entirely up to you, depending on how many meals you wish to make and how much protein you need to meet your daily macronutrient needs.
