This weeks recipe of the week is a bit of healthy competition between the Physique trainers. We both have a healthy lasagne recipe and we both think ours is better than the others.
So we are leaving it down to you guys to decide whose is best!

Steve's Lasagne
Ingredients
500g of turkey or beef mince
2 courgettes
200g pot of cottage cheese
2 egg whites
1 clove of garlic
1 red onion
1 chilli
400g tin of chopped tomatoes
Feta cheese for topping
Coconut oil for frying
Method
Pre heat the oven to 180
Fry the garlic, onions and chilli in a little Coconut Oil then add the mince of your choosing until brown. Add the tomatoes and simmer for 10 mins
In a bowl combine the egg whites and cottage cheese
Chop the courgettes into small slices using a mandolin.
Start making your layers in this order – meat sauce, courgettes, cottage cheese, meat sauce, courgettes. Then top off with a good sprinkling of feta cheese and bake in the oven for about an hour. Check after 40 mins.
Mark's Lasagne
Ingredients
500g lean ground turkey
1 small onion finely chopped
2 cloves garlic crushed
250g can chopped tomatoes
2 tbsp tomato purée
1/2 cup sun dried tomatoes
1tsp Italian seasoning
¼ tsp black pepper
1 large courgette
2 handfuls fresh spinach chopped
125g ricotta cheese
50g grated mozzarella cheese
1 tbsp freshly chopped parsley
Preperation
Preheat your oven to 180 degrees.
Melt the coconut oil in a pan over a medium heat and sauté the onions until lightly golden.
Add the turkey mince and garlic and cook until turkey is browned.
Add the chopped tomatoes, purée, sun dried tomatoes, Italian seasoning and the black pepper, simmer for a few minutes then remove from heat.
In a bowl, combine chopped spinach and ricotta mixing it into a paste.
Using a vegetable slicer, thinly slice the courgette length ways, this can be a little tricky, so take care.
In a baking dish, first put a layer of mince, next the ricotta spinach mixture, then a layer of courgette, do the same again,
Finally sprinkle the grated mozzarella over the top. You can get creative here and do any combination of layers you wish.
Bake in the middle of the preheated oven for 25 minutes or until cheese becomes bubbly and golden.
Sprinkle with the freshly chopped parsley and enjoy with steamed vegetables.
This is a wonderful new healthy version of an old Italian classic, and when it's been cold and windy outside, this is the perfect comfort food to pick you up after a long day.
