Chicken Fajitas (Sans the Tortilla)


This week in Physique gym we are feeling the taste of Mexico, and our recipe of the week is a nice spicy one, perfect for a Friday evening treat, and it's a healthy too. So get some Salsa music on the stereo and shake your hips into the kitchen, and prepare these tasty Chicken Fajitas.

Ingredients Tesco fajita seasoning 30g (This has much less sugar than Old El Paso) 500g chicken breast, cut into thin strips 1 large red or yellow pepper, sliced (or half of each) 1 large onion sliced Coconut oil (for frying)

Romaine lettuce (for the wraps)

Salsa, Sour Cream, Guacamole and Jalapeno's (For the Garnish)

Avocado, Baby Leaf Spinach, Cherry Tomatoes and Cucumber (for the salad)

Why not make one of our salad dressings and drizzle over the top

Method

Cut the chicken breast, peppers and onions into thin strips Heat the coconut oil in a pan until hot Add chicken and stir-fry over a medium heat until brown and thoroughly cooked Add the Fajita spice mix, peppers and onion Stir-fry until the spice mix coats everything thoroughly to make a juicy filling

Now put a good helping of the fajita mixture in a large romaine lettuce leaf with salsa, sour cream, guacamole and jalapeno's. Wrap it up and enjoy. They are extremely messy but that's why they are so healthy.
