Mark's Meatballs


These meatballs are super tasty and amazingly healthy, and with no pasta in sight, they can be enjoyed any time of day or night. They are great on a bed of baby leaf spinach, with steamed green vegetables, or my personal favourite ‘Courgetti Spaghetti’, and if you need a little more energy add some cooked Quinoa on the side.

The Meatballs

Ingredients:

400g Turkey Mince

1 Medium Onion, chopped

1 Egg

1 tsp Mixed Herbs (I love Italian herbs)

Salt & Pepper (to taste)

1 tsp Coconut Oil

Preparation:

Firstly melt half of the coconut oil in a pan over a medium heat,

Add the chopped onion and gently fry until soft, and remove from the pan to cool,

Season with the dried herbs, salt and pepper, and spices (if you’re feeling saucy),

Mix the cooked onion, turkey mince and egg together in a large bowl (get your hands involved in this),

Then shape the mixture into bite sized balls (the size of your mouth not your stomach),

Now melt the other half of the oil in a pan on medium heat,

Add the bite sized meatballs to the pan, turning occasionally until golden brown.

The Tomato Sauce

Ingredients:

500g Tin Chopped Tomatoes

1 Medium Onion, chopped

2 Garlic Cloves, crushed or chopped

1 tsp Mixed Herbs (again I love Italian herbs)

1 tsp Olive or Coconut Oil

Method:

Over a medium heat, cook the onions in your chosen oil for around 3 minutes,

Add the crushed garlic and cook for a further 3 minutes stirring often,

Pour in the can of chopped tomatoes and stir in the mixed herbs,

Leave to simmer for between 10 and 15 minutes stirring occasionally.

When cooked simply pour the tomato sauce over the meatballs, or add them to the pan and stir them into the sauce. Oh, and however you enjoy them, a little freshly grated parmesan over the top won’t hurt!
