Banana & Blueberry Muffins


These banana & blueberry muffins make a great snack any time of the day or can be used as a breakfast on the go. And with only three simple ingredients everyone can make them.

Ingredients:

2 x Ripe bananas

4 x Eggs

Handful of blueberries

Method:

Pre-heat the oven to 180 degrees.

Mash up the bananas in a bowl with a fork.

Add the eggs and mix well.

Spray the muffin tray with a little oil and place a few blueberries in the bottom of each compartment. Add the mixture. (it should make 6 muffins).

Place in the oven and bake for about 15 mins.

These can be enjoyed hot or cold, and kept in the fridge for a healthy snack.
