Black Bean Brownie


Sometimes we all fancy a little treat, something sweet, sticky and gooey. This black bean brownie is the perfect healthier way of satisfying that craving. A great alternative to those sugar ladened brownies. Perfect enjoyed any time of day with a nice cup of tea or coffee.

Ingredients: 230gram Can Black Beans (drained) 2 Eggs 150ml Greek Yogurt (fat free) 2tbsp Raw Cacao Powder (3 if you want it more chocolaty) ½ cup Xylitol 1tsp Baking powder ½tsp baking soda 1tsp balsamic vinegar 1tbsp Vanilla Extract 30gs Protein cooking mix 1tbsp Olive Oil Pinch Himalayan Pink Salt 100g Dark chocolate 85% 100g Chopped Walnuts

Method: Pre-heat the oven 180 degrees. Place all ingredients except for the dark chocolate and walnuts into a blender and whizz for a minimum of 45 seconds, if you have a Nutri Ninja this would be perfect. Using a sharp knife, roughly chop the dark chocolate into little pieces, and gently stir this and the chooped walnuts into the mixture.

Lightly grease an 8” cake tin with coconut or olive oil, and pour it all in. Bake in the middle of the pre-heated oven for roughly 30 minutes.
